We’ve always been fans of acid-profiles – be it in wine or beer. Citray Sour was an opportunity to share this enjoyment for acidity with a broader audience.
We had already caught a strain of lactobacillus (a souring bacteria with the ability to produce lactic acid) wild in our Alphington brewery. And this strain turned out to be the perfect way to bring a natural sourness to our farmhouse ale that also aligned well with our choice of fresh fruit – oranges.
With its launch in 2016, Citray Sour quickly turned heads – emerging boldly onto the beverage scene with its unapologetic but respectfully in-check sourness. It quickly proved popular with new and seasoned beer drinkers, as well as those who might’ve otherwise aligned themselves with white wine. It also caught the attention of the beer industry, motivating other brewers like Stone & Wood legend Neil Whittorn to get into our DMs with appreciation.
Along with our house yeast, Citray Sour is naturally soured using our own unique strain of lactobacillus – a strain we caught wild in our brewery and have maintained a culture of since 2016.
In the spirit of farmhouse brewing, we use real fresh Victorian oranges for that fresh, bright and juicy citrus flavour. The use of real oranges and our own unique wild strain of souring bacteria gives Citray Sour an unmistakably natural and easy-going character that continues to earn new fans!

The heady citrus aromatics emerging from this light-orange, hazy sour ale will transport you straight to the orange orchard. Giving way to a welcome, natural-tasting acidity (thanks to the influence of our unique wild-caught strain of souring bacteria) Citray Sour finishes dry, citrusy and refreshingly tart. A sessionable sour ale made for the outdoors.
Pair with poultry and fish dishes, burrata, salads and bruschetta.
