Sometimes we stumble across a barrel at our brewery that just has something special about it.

In this case, it was a barrel-aged wild ale, left without intervention for 5 years in our brewery. We tasted it and picked up instantly on its prominent savoury umami character.

Incredibly, despite its savoury aspects, X∙O is also super-bright, fruity and amazingly refreshing.

X∙O – so-named in honour of its umami features – was launched at our recent degustation collab dinner with the ever-inventive team at Restaurant Gaea in Fitzroy. It is next-level food beer just asking to be paired!

X∙O is a super-limited single barrel wild ale – put to can to pause its maturation at its current peak – ready to be enjoyed right now!
