THE LOWDOWN

We’ve been looking forward to putting De La Maison into bottle for a long time.

We consider De La Maison to be our house beer (its name translates to “Of the House”).
It is a wild ale that represents some of our favourite aspects of brewing: spontaneous fermentation, barrel-ageing and the addition of fresh fruit.

De La Maison is brewed using our authentic Coolship – inviting nothing but wild yeast and bacteria into the ferment. These are the only microbes involved – allowing for truly minimal intervention from us as brewers.

BREWERS NOTES

For us, this represents the pinnacle of wild brewing (and brewing in general).

The beer is then aged for 3 years in Burgundian oak barrels. The addition of whole fresh European raspberries before bottling brings a tart, fruity finish and a neon red colour that tastes as zippy as it looks.

Wild and complex, with a spectacularly well-rounded acidity, fruity and tart, and red as red can be.

This is a beer that is made to wow – it’s guaranteed to impress!
