THE LOWDOWN

We debuted our latest creation – Bâtonnage Peach – at Blobfish 2024, with many naming it their best-in-festival beer!

This wild ale was fermented on Chardonnay lees from Mac Forbes winery in the Yarra Valley.

Unique to this beer, we employed the Bâtonnage method of lees stirring – the same technique used to bring texture to traditional Champagne. After almost 2 years in French oak barrels, we added fresh, whole pitted peaches for a complementary dimension of fruit.

The result is a highly approachable wine-hybrid with a restrained acidity, back-of-the-palate brioche character reminiscent of a good Champagne, and a delicate fruity peach character on the front palate.

Bâtonnage Peach is a fun, yet dignified wild ale that we are excited to be sharing.
