Our signature wild and farmhouse ales are a representation of place, time & season.
This philosophy drives us as artisans of unique and expressive beers – from our very first Saison in 2010 up until today. We draw on traditional approaches while allowing our wild ales to be driven by the influences of here and now. Our beers are made in harmony with the seasons - inviting the influence of wildly occuring yeast and bacteria from the natural environment around our brewery.
As the première brewery in Australia with a singular focus on wild and farmhouse ales, we are pioneers in these styles of brewing. Our house style continues to attract success across Australia and around the world. Family-owned and operated; we are a small team with big ideas and a relentless passion for creating unique things.

OUR JOURNEY
We opened our brewery in 2010, originally on the edge of the Darebin Parklands in Alphington, Melbourne. With our origins in winemaking, we were drawn to the old world brewing traditions of French-speaking southern Belgium - wild ales that are an expression of where and when they are made. We were especially fascinated by the rustic Saisons of Wallonia - beers we've long-loved to consume ourselves.
What started as a love for consuming became an obsession with creating. It wasn't long before the brewery was founded, created out of a desire to master and champion these highly expressive and interpretive wild ales in Australia. Our name is a nod to our early inspirations and La Sirène (the siren) was our response to this calling. Since 2010, we've continued on this journey.
We're driven by an unwavering commitment to explore and innovate within the realm of wild and farmhouse brewing and to challenge perceptions and broaden experiences of what beer can be.
Beyond saisons, our repertoire celebrates the wonders of completely spontaneous fermentation through the use of our authentic Coolship, and with the pioneering and creation of a range of wine-hybrid wild ales borne from our origins in winemaking.
In 2023, we moved from our original site in Alphington to our new home in Reservoir, just north of Melbourne CBD. Here our journey continues, where you're welcome to experience all things La Sirène alongside delicious meals from our kitchen at Bar La Sirène.

ART OF WILD
The creations of La Sirène are more art than science - the product of inspiration, creativity and time.
Using techniques including open and spontaneous fermentation and barrel-ageing, we honour the nature-driven traditions of the centuries-old farmhouse ales and lambic styles of southern Belgium. From our urban home in Melbourne’s north, these methods take on new dimensions through the influence of our native microflora and the local climate.
These wild microbes bring complex flavour and aroma profiles that are unique to a moment in time and anchored to our location.
Using local ingredients in their most natural form, we take a minimal intervention approach that allows our resident yeast and bacteria to do their best work. We let our artisan ales ferment naturally- this takes patience and time, yielding results that cannot be rushed. Although we see ourselves as advocates for this process of natural fermentation, the results really speak for themselves. Whether it takes months or years, our wild ales are given the time they need.
Wild is also our ethos. Exploration and experimentation are part of our signature style. We create beers that express who we are and what we love to drink. Instilled with the spirit of farmhouse brewing, we choose to be unbound by the rules - our creations often sitting outside the realm of common beer. Our artisan ales evoke a sense of the familiar, while transporting you to new places thanks to innovative and instinctive approaches.
We are lovers of all things funky, sour, and wild! Our artisan ales are intended for sharing with good company and great food – complementary, contemplative and full of character.

OUR HOUSE STYLE
Our signature house style stems from the idea that as with a region's wine, beer should be recognisable. Over our years of brewing, we've developed our own house style. It is the culmination of years of capturing and curating wild cultures, maintaining and honing our barrel program and developing our art of barrel blending.
The site-driven character that has resulted is what makes our wild ales so recognisably 'La Sirène'.
We endeavour to create beautiful ales that are thought-provoking and engaging, yet highly drinkable. Our house character conveys this - bold yet delicate, unrestrained yet refined, fresh yet complex.
The drinkability of our beers comes with the fine balance of these things, expressed through their palate, texture, mouthfeel, line and length.

SUSTAINABILITY
As modern day Farmhouse Ale producers, creating artisanal ales in a sustainable way naturally is at the forefront of our ethos and practices. From our raw materials supply to packaging recyclability, responsible power usage and waste disposal, we ensure we minimise waste & unnecessary consumption of finite resources.
